DIY Caramel Pretzels

My mother in law called me yesterday to share this quick and easy caramel recipe. In her opinion, it is every bit as good as the caramel made with cream. This was my first time making caramel and I have got to say, it is incredibly delicious and easy enough for a novice like me to accomplish. 

Quick and Easy Caramel
2 C sugar
1 C butter
1 1/2 C light karo syrup
Pinch of salt
1 can sweet and condensed milk
1 tsp vanilla

Melt butter in a non stick pan on medium heat. Dissolve sugar in butter. Add syrup, salt, and sweet and condensed milk. Keep at a low boil until it reaches 230 degrees or at the soft ball stage. Use a candy thermomitor to make sure you get the correct temperature. This should take about 30 minutes. Once the temperature is reached, add 1 tsp of vanilla. It will sizzle a little so be careful. Dip pretzels into the Carmel and lay them out on wax paper to set up. Enjoy!
