DIY: Honey and Lime Tilapia Tacos (Gluten Free)

  I feel like the summer is winding down, so I have been trying to make as many summer friendly recipes as I can before fall knocks on the door.  These little tacos are like summer in your mouth!  They are incredibly healthy, easy to make, and gluten free (which is a huge plus for my brother with celiac's disease).

Fish taco Marinade Recipe
Ingredients:
4-5 thawed tilapia fillets
2 T honey
1/2 a chopped up mango
Juice and zest of one lime
1 garlic clove minced
1 1/2 T olive oil
salt to taste  

In a zip lock bag combine all of the above ingredients.  Put in the fridge for at least an hour.  I always let the fish marinade for around 6-8 hours.  You could even mix up the marinade the night before and let it marinade for like 12 hours!  Wow would that be delicious! 

About 20-30 minutes before you are ready to eat, dredge the marinaded fish in rice flour.  If you don't wish to eat the gluten free way, just use white or wheat flour.

Pre-heat oven to 235 degrees.

Warm up about 2 T olive oil in a skillet and fry up each side of the now flour coated tilapia (about 3-4 min per side).  The outside of the fish will be crispy and the inside flakey.  After frying the fish place it on a cookie sheet and put it in the warm oven until you are ready to serve.

Finally warm up some corn tortillas, and chop up any other garnishes that your heart desires.
