DIY: Cilantro Tilapia Tin Foil Dinners

My Brother-in-law is in town after surviving his first year of medical school.  Not only is he a total brain,  he is a dang good cook.  He shared this recipe for this flavorful, and oh-so-healthy tilapia treat.  What a nice guy...


You will need:
tin foil

For the Tilapia Marinade:
6 Tilapia (thawed)
1 Lemon
Olive Oil
Salt and Pepper
1/2 bunch of Cilantro 

For the Veggie Mix:
Carrots
2 Zucchini
2 Tomatoes
1/2 Onion
1/2 bunch of Cilantro
Capers 
Crushed Garlic (4 cloves or so)
Salt and Pepper

Set oven @ 425 degrees.  Packets cook for 25-30 mins until fish is flakey and veggies are perfectly steamed.



1.  First thaw tilapia.  Then place it in a bag and marinade with the juice and zest of a lemon, half a bunch of chopped cilantro, a couple tablespoons of olive oil and salt a pepper.  Set aside.


2.  Chop carrots, 2 tomatoes, about 2 zucchini, half an onion and the other half of the bunch of cilantro. Mix with a couple Tablespoons of capers.  Add crushed garlic. Drizzle olive oil and the juice of one lemon.  Mix your veggies well so they are evenly coated with the juice, garlic and lemon.  Salt and pepper to taste.


3.  Prepare a piece of tin foil with a drizzle of olive oil.  Place tilapia on the lightly greased tinfoil.  Cover the fish with the delicious veggie mix.


4.  Prepare little packets to go into the oven.



While the packets are cooking we made some brown rice to serve with this amazing dish.  It was AMAZINGLY easy and INCREDIBLY delicious!  What a perfectly quick meal for a lazy summer evening!
