1 (3-5 lb) boneless pork loin roast or chicken

1 Cup salsa

1 Cup packed brown sugar

Place ingredients in a greased 3.5-4.5 quart slow cooker. Cover and cook on low heat 8-10 hours (or until tender). Shred pork or chicken with a fork or potato masher

Cilantro Lime Rice:

1 cup uncooked rice

1 tsp butter or margarine

2 cloves garlic minced

1 tsp grated lime peel (zest)

1 can (15 oz.) chicken broth

1/4 cup water

2 Tbsp freshly squeezed lime juice

2 tsp granulated sugar

3 Tbsp fresh chopped cilantro

In a saucepan, combine rice, butter or margerine, garlic, lime peel, chicken broth and water.
Bring to a boil. Cover and cook 15-20 minutes until rice is tender.

Remove from heat. In a small bowl, combine lime juice, sugar, and cilantro.

Pour over hot cooked rice.

1 cup sour cream (add first)

1 envelope Ranch salad dressing

1/2 envelope Fiesta Ranch salad dressing

2-3 big tomatillos husked and cut in half

1 clove garlic

Juice from 2 limes freshly squeezed

1/4 cup fresh chopped cilantro

BTW: This is what tomatillos look like (I hardly ever cook Mexican food so I had to do some research before preparing this meal.) Just a helpful hint in case you didn't know :)

Combine all ingredients in a blender and blend until smooth.

2 cloves garlic minced

1 tsp grpund cumin

2 Tbsp olive oil

1 can (15 oz.) black beans, rinsed and drained

1/3 cup tomato juice

1/2 tsp salt

2 Tbsp fresh chopped cilantro

In a nonstick skillet cook garlic and cumin in olive oil over medium heat until you smell it).

Add beans, tomato juice and salt. Continually stir until heated through.
Just before serving, stir in cilantro.
Right before serving get a griddle out, or frying pan and heat up some tortillas. We recommend using uncooked flour tortillas. You can find these at Walmart or any local grocery store. This will be the base of your Cafe Rio Salad.
Now the fun part... I always layer my salad in the following order

1. Tortilla
2. Chicken/Pork
3. Rice
4. Black Beans
5. Lettuce
6. Dressing

Chocolaty Chocolate Chip Cookies

4 1/2 C flour

2 tsp baking soda

2 C butter, softened

1 1/2 C packed brown sugar

1/2 C white sugar

2 (3.4 oz) pkg instant vanilla pudding mix (or chocolate)

4 eggs

2 TBS vanilla extract

4 C chocolate chips

Bake at 350 degrees for 10-12 minutes.

Sift dry ingredients. Beat together butter, sugar, pudding, eggs, and vanilla. Blend in flour mixture. Stir in chocolate chips. Place on cookie sheets.

First you need to tape off where you want to put your chalkboard. We pretty much put ours dead center on the wall. Make sure you put paper over your carpet and baseboards just to keep them paint free.

Then just paint away. We used two coats of paint.

Then let it sit and dry for 3 days... Some people say to take the painters tape off immediately to avoid pulling off paint you don't want pulled off. We kept ours on there and it was fine.
And this is the finished product!!! Go ahead, let your kids color all over your wall ;)

Here we go... FINALLY!! Sorry for the long awaited step-by-step instructions for this handsome little onesie. As previously stated, my sis and I have been so busy quilting lately that I just lost track of time and forgot to post.

This is what you need:* One Onsie
* Fun fabric that would be perfect for a tie
* Thread to match tie fabric
* lining (paper in texture, feels a lot like wax paper)
* Measuring Tape
* Scissors
* Pins
1. Here we go, let's get started! The very first thing I did was measure the length I wanted the tie to be. I decided that from the neckline I wanted my tie to be about 8 inches long.

2. After determining the perfect length for my little guy's tie I folded my "tie-like" fabric on a diagonal. This will of coarse make the tie's stripes slanted rather than perfectly vertical of horizontal. I made sure that the tie would only be 8 inches long from the top to the pointed bottom. By folding my fabric in half I was able to eyeball what half a tie would look like then open my half a tie and get a full tie minus the knot at the top.
3. Above is what my tie looked like once I cut it out and unfolded it. I also eyeballed the knot and cut it out. I made sure that the lines were going the opposite direction as the full tie. This will ensure that your little guy's tie will look just like dad's.
4. I layed it out to get the full picture.
5. Okay, this part was a little scary... but you can do it. I decided that in order to sew on the tie it would make my life a little bit easier to unpick one side of the onsie. This made for much easier access.

6. Now for that paper lining. This stuff really helps when sewing on applique. It allows a bubbleless finish.
7. As you can see above I just slipped the lining in between the unpicked onsie. This I laid the cut out tie on the front. As shown below I pinned the tie on the onsie, making sure that I also pinned the lining as well.

8. The tightest and widest zig-zag stitch that your machine can make is the way to sew on this little man tie. Look below to see how cute it turns out.

9. Make sure to tear of the extra lining inside the onsie so it won't bother your little guy. Be careful not to tear too hard. It actually tears off very nicely, and gives quite the professional look.

10. I didn't post a picture to show this next step... but don't forget about that unpicked seam that you made. after tearing away the extra lining, keep the onsie inside out, right sides together. Simply sew with a straight stitch all the way up the unpicked side for your finished product.
